20 Minute Meals - Sweet Chili Chicken
When you are busy with life meal prep and quick healthy meals can be difficult. I am a mom of 3 and a realtor, we also own a restaurant with a ghost kitchen. So I feel your pain! #thestruggleisreal Let me share this quick dinner with you and a couple variations to make it #Vegan and #keto friendly.
This will serve a family of 4-6 no problem.
2 cups par boil rice
3-4 large chicken breasts
1 jar sweet chili Thai sauce
1 bag match stick carrots
1 tbsp soy sauce
2 tbsp chives
2 - 3 tbsp olive oil
Sea Salt and Black Pepper (to taste)
Cook rice according to directions add soy sauce and chives while cooking.
Cut up chicken breast in small cubes and cook until browning in a pan with olive oil, sea salt and black pepper. Cook at medium - medium high heat.
Add sweet chili Thai sauce over cooked chicken. Rinse jar with a little water, shake and add to pan. Bring sauce to a slight boil and remove from heat.
Plate with rice on bottom, add match stick carrots uncooked on top of the rice, top with chicken and sesame seeds.
Follow the above directions and substitute chicken with firm cooked cauliflower pieces.
Follow the above directions and substitute sweet chili Thai sauce (also known in some markets as cock sauce for chicken... not kidding lol) with your favourite sugar free hot sauce. We use a Jamaican Hot Sauce. Substitue the rice with riced cauliflower. I promise it is soooo good!
